Cooking updates


We’ve been cooking a lot lately. And I mean a lot.  So I just wanted to share some great recipes. The great thing about cooking is that you know exactly what’s going in. Most of the recipe we’ve used lately have called for mostly fresh ingredients.

  • I already posted about these great tacos, but no really, we made them again and they are the best tacos I’ve ever made. Recipe here. I really love this salsa recipe, though.
  • Cilantro lime shrimp. These were spicy and delish. I served with black beans that kind of toned down the spice just enough. Recipe here.
  • Almost meatless sloppy joes. The husband and I inhaled these. I love the canned kind, but you know, they aren’t that great for you. So I found this recipe online. So easy, very little work involved and seriously omg good. Recipe here.
  • Spicy whiskey BBQ sliders. We used turkey and our new cast iron skillet. Love the sauce. Recipe here.
  • Lamb tagine with potatoes and chickpeas. Great flavors. It took a while to cook (we used a skillet since we didn’t have a tagine) but it was worth the wait. Recipe here.
  • Curried Chicken couscous. These tart cherries are my new favorite snack food. Easy to make and pretty yum. We served with brussel sprouts. Both were good as leftovers, too. Recipe for chicken here and sprouts here.
  • Buttermilk pancakes. I made these despite having the bisquick mix. We had left over buttermilk from another recipe. It really wasn’t any more involved than the box kind, but it had none of those strange ingredients from prepackaged food. Recipe here.
  • Oven-fried buttermilk chicken. We didn’t use saltines. Instead we used tortilla chips, chopped in our food processor. Once they are chopped up, they are more like breadcrumbs. The husband can’t stop raving about it. The buttermilk made the chicken nice and juicy, and the chips gave it a nice crunch. Recipe here.

That’s all I can think of right now. I’ll try to be better about sharing what’s worked out. Now, seriously, go make those tacos.
